Veggie Lentil Soup
INGREDIENTS
1 16oz. bag lentils
8 cups Vegetable stock
1 can Stewed tomatoes
1 cup canned Corn
1 large Onion, diced
2 large Carrots, sliced
1-2 cut Zuchinni, chopped
2-3 cups Kale, chopped
* Can also add 2 med. white potatoes, diced or 2 large celery, sliced
lemon wedge
6-7 stalks fresh Thyme
2 Bay leaves
salt and pepper to taste
1 tbsp garlic
INSTRUCTIONS
1. Add all ingredients to the crock pot except the kale and stir. Cook on low for 6-7 hours.
2. Add the kale and cook for another 15 minutes or until desired tenderness.
3. Or, add oil into pot, cook carrots, onion, zuchinni first. Then add, stewed tomatoes, corn. Stir. Add in veggie stock, lentils, kale, garlic, thyme, bay leaves. Simmer on medium for 50 min. Remove bay leaves once pau.
