Portabella Mushroom Sandwich
INGREDIENTS:
2 tbsp olive oil
1/2 Onion
1 1/2 Portobello Mushroom
1/2 Red bell pepper
1/2 tbsp garlic
salt and pepper to taste
can add- Old Bay Seasoning and Thyme
INSTRUCTIONS:
1. Toast bread. Add hummus on both sides of bread. Meanwhile in a skillet, heat olive oil and add onion, garlic, portobello mushrooms, red bell pepper. Cook for 7 minutes.
2. Add veggies to the toast, and cut sandwich in half.
3. Eat with your favorite soup or salad.
