Easy Vegetable Soup
INGREDIENTS:
3 chopped Celery
4 peeled and chopped Carrots
2 Bay leaves
1 1/4 cup canned Corn
1 1/2 tbsp garlic
1/3 cup Parsley
1/2 tsp Thyme, dried
2 cans Tomatoes
1 1/2 cups Yellow onion
2 1/2 tbsp Olive oil
3 cups Peeled and 1/2-inch thick diced potatoes
14.5 oz Vegetable broth
INSTRUCTIONS:
1. Add all ingredients into a crock pot. Cover and and Cook or 6-8 hours on low, or 3-4 hours on high, stir occasionally. Serve warm.
